Commercial Kitchen Consultant

I need an experienced commercial-kitchen specialist to take my catering operation from an empty shell to an execution-ready facility capable of producing 1,000 – 5,000 meals a day. This is a full-scope engagement: you will plot the workflow, size and specify every piece of equipment, and hand over drawings and documents that contractors can follow without a single clarification call. The kitchen is a dedicated catering kitchen, so efficiency of bulk production, rapid chilling, hygienic packing and smooth dispatch all matter more than front-of-house aesthetics. You’ll translate those priorities into a logical flow covering receiving, dry & cold storage, prep, cooking, blast chilling, packing, dishwashing and waste handling. Deliverables • 2D and 3D layout drawings showing walls, equipment footprints and service drops • Equipment schedule and BOQ with right-sized ranges, combi ovens, cold rooms, exhaust, fire-suppression, grease traps and any other essentials for the stated capacity • Utility and service schematics for electrical load, gas lines, plumbing, drainage and hood/exhaust design • Compliance notes meeting FSSAI, local fire-safety codes, hygiene regulations and best-practice HACCP • Final execution pack ready for vendors and civil, MEP or HVAC contractors Acceptance criteria • Layout supports the target throughput without cross-contamination or bottlenecks • All services are dimensioned and labelled clearly enough for direct tendering • Equipment selections match the calculated production load with scalability headroom Hands-on experience designing central, cloud or large catering kitchens is mandatory; please include at least one comparable project in your proposal.
