Update MOSS customised fab 40 .stp training site to SharePoint 2010

Job Description:
I have a customised SharePoint 2007 fab 40 "Employee Training Scheduling and Materials" site.
The customisation lets you choose set a course to:
"Open" - People can register themselves or course manages can register students.
"Closed" - Only course manages can add students.

I have attached the customised .stp site template to this project.
I'm not fussed if you update the 2007 or start from scratch with the 2010.
This is a very simple task - I'm am looking at doing a lot bigger projects if this works out ok.
Just to make it clear:
I want 2 forms of "enrolment types" when a course is created:
"Closed" - Contributors for the list or instructors of course can add employees as students.
"Open" - Employees can add themselves as students (currently the way the standard template works) and Contributors of list or instructors of the course can add employees as students.
Also the location is a list lookup instead of text.
I have added some screen shots.
Also remember the attached TSGTrainingSite.stp has the "open" and "closed" functionality in it.
