Press-ready is the word in your brief that matters most, so let me answer that part properly rather than treat this as ordinary typing. Hindi typesetting has a specific failure mode: Devanagari conjuncts and matras render correctly in one font and break in another, and a PDF that looks right on the machine that made it can reflow or drop glyphs elsewhere. So the fonts must be embedded in the PDF, and the text should be typed in proper Unicode Devanagari rather than a legacy Kruti Dev style encoding, which looks fine visually and turns to nonsense the moment anyone copies, searches or reuses the text. If your letters need to be searchable or edited later, that choice matters a great deal. On accuracy: I would type these rather than OCR them. Hindi OCR on scans and phone photos is markedly weaker than on English, and the errors it makes -- a wrong matra, a missing nukta -- change meaning while looking plausible. For letters, plausible-but-wrong is the worst outcome, so typing plus a proofread is the honest route. Two things to confirm: do you want the original layout reproduced faithfully, or clean formatting applied, and is there a font you need matched for consistency with existing material?
