Rebuild my TRADING website DATABASE (it uses CodeIgniter )

Hi, I open this project as I am in dispute with a developer who fail to fully finish the job, and I need the work to be done urgently.
I lost already 3 weeks, so I don't want to do it with him anymore.
I need to rebuild a full database with structure, datas, settings, for a trading website. I have all the site files, but the database is missing. I have no way to recover it, and no way to contact the old developer. I know he sold the same platform to another customer, so I can provide an online demo that you must clone EXACTLY, including front end, back end, and all functionalities.
Before you start the project, I will give you those files, which are the last online demo version files so you can check nothing is missing and you have all elements to start the job, so after I don't want to hear it is coding or files problem.
The database to rebuild is big, about 100-150 tables. Job must be done in 5 days. Then, the platform and all the functions must be fully working without any bug, exactly like the online demo website I will give you.
Developer must be very experienced with CodeIgniter, JS, PHP. You must have experience with trading websites.
You should work in local or remote, but you must upload your work to a remonte server so I can follow how it goes (so you need to have your server to host and show your work). If no URL is provided within 2 days I will open a dispute. I need to see how it goes.
You must be online at least 4-5 hours between 3PM-1AM GMT (so we overlap), and work for min 8-9h per day.
I don t have Teamviewer or Skype.
