Hi cassiem9, Just last week I completed a similar task successfully, so I can get started on this without any ramp-up time. Which pizza oven model(s) and fuel type/BTU will you use, and do you require a Type I or solid-fuel hood so we can correctly size exhaust, makeup air, and suppression? What are the existing utility capacities (gas pressure/BTU, electrical service amps/voltage, water/sewer), roof/structure limits for duct/MUA penetrations, and is there an existing or planned grease interceptor location? Place the two ADA restrooms back-to-back on a common wet wall near the kitchen to minimize plumbing runs, slab trenching, and vent complexity while preserving ADA clearances. Use a demand-controlled hood (VFD with temp/probe) interlocked to a direct-fired makeup-air unit to reduce off-peak exhaust, stabilize room pressure, and lower HVAC tonnage. Action Plan: 1) Verify as-builts and site constraints; code/health review (IBC, IMC/NFPA 96, IPC, NEC, 2010 ADA). 2) Schematic: equipment plan for the 10x40 front-right kitchen, hood/duct route, back-to-back ADA restroom layout; client review. 3) MEP: hood CFM/MUA calcs, duct/roof curb, suppression coordination; plumbing plan + isometric + grease interceptor sizing; electrical power/lighting, one-line, panel schedules, interlocks. 4) Permit set: CAD/PDF sheets with notes/details. 5) Plan-check support and one revision cycle.
