My priority is consistency and speed, and I’m looking for a chef or food-process consultant who has already worked in commercial South Indian kitchens or tiffin-style QSRs. What I need you to deliver within 7–10 days: • Batch-size recipes (50–100 portions) for idli batter, dosa batter, sambhar, coconut chutney, red chutney and dosa masala • Precise measurements, cooking times and holding guidelines that keep flavour identical across shifts • Clear SOPs that show portion control and the fastest line-friendly sequence for service • Documentation packaged so my team can follow it without you on site (Word or spreadsheet is fine; photos or quick prep videos are a bonus) • Tips for production planning, par-stock and any small-equipment tweaks that will keep ticket times low On-site work is preferred because it lets us test the formulas on our equipment, but I can accept remote collaboration if your documentation is airtight and you’re available for quick video reviews.
