Locking the rate at billing time is the detail that matters most here. Once a bill's saved, its rate and tare numbers need to live on that bill row itself, separate from whatever the product master shows later. I'd keep the master table for defaults only and snapshot rate, gross weight, tare and charge onto each line the moment it's billed, with SQLite behind it since this needs to stay local and fast. Is there existing stock data or a paper register to bring in, or starting from a blank product list?

So when you change Makhana to ₹450 later, the 19 September bill still shows ₹425. I would build that first and fit the fast billing screen around it.
