We are creating a line of carbonated ice tea drinks using organic ingredients and sweetened with honey. We are processing the teas with Velcorin (dimethyl dicarbonate) to make them shelf stable. We have done initial test runs of a green tea and a mate tea and sent them to a lab for testing. The results showed unacceptably high aerobic plate counts (attached) We need to understand what is going on and get to a stable product
