Forward proxy server to capture WebSocket traffic

I need a proxy to sit on my local network which would capture traffic between host and client, and then pass that traffic on to the destination. It needs to be able to work with encrypted traffic as well. Using a self signed certificate on the client would be ok.
Ideally the proxy server will capture web socket traffic, and then forward to another server or application for use in other applications.
I'm open to any technology such as nginx, apache, squid, etc.
