Chinese Big5 typeset/Menu desing

I have hand written text in Big5 Traditional Chinese, need to typeset and some formating. I will fax the pages to you if you get the project. I only have Window 2000 language setting in Big 5. I need to combine these text with some photo. I have US Photoshop, Illustarator, Indesign, but I don't think these program support Chinese. May need you help on how get text in these programs. I need someone know some desing and output on how to print this to an inkjet printer.
