Linux Redhat server crashes from high sendmail loads from spammers or scripts

My server keeps crashing. I have 200+ websites dealing mostly with medical issues, supporting people with various diseases. Our linux server runs on Redhat 7.1 and we use Ensim Version Appliance Administrator 3.0.3-4. I am not sure what version of sendmail is on the server.
The sendmail load keeps getting extremely high and crashes the server. And I keep having to reboot. I think someone is sending out spam and forged our sites' return address. It's also possible that one of the scripts on one of the sites is in a loop, such as one of our message boards, or that spammers have taken over one of the scripts to send out email.
We use an EV1 server. And, so far, I have not been been able to solve the problem, although I think it would be fairly easy for someone who knows Linux Admin and Sendmail well.
I may need to upgrade sendmail - please tell me if it's needed, as well as do some security and anti-spam things.
