A scan turns a table into lines of text, and the damage happens where a cell wraps onto a second line or where two cells are merged: the row quietly shifts and one column ends up holding two values. So I rebuild tables as tables, cell by cell, and then check the arithmetic that the page itself contains, totals and subtotals, against the numbers I extracted. If a total does not match, that page gets read again rather than delivered. Reading order. Two-column pages, sidebars and footnotes come out interleaved if the order is taken from the scan as is. I set the order page by page, so the Word file reads exactly like the paper. Delivery as you described: Word for the text, Excel for tables and lists, ready for sorting, original structure kept, no invented formatting. Before you commit: send two pages, ideally the ones with the ugliest tables, and I return them finished so you can compare against the paper.
