I am looking for a cisco voice expert. I currently have
1 x Cisco 2821 router
2 x 7975g Phones
I need this to work like a mini call centre.
Customer Calls > Call goes to our hosted PBX than depending on the option call is routed to our CCME.
User will log into the phone every morning, when call comes in, staff answers the call. If the staff can not answer the call, than the call will be placed in a queue until the staff member is ready to answer the call.
When staff member is ready to answer the call. He will press a button on the phone to receive the next call.
If phone 1 receives a call then next call needs to go to phone 2. If the phone is not answered within 5 minutes then the call needs to be routed to my mobile.

I did the same system at the company where I work. But we have over 400phones and users and 10ppl is working like a call centre. And this system is working fine.
I have very good experience in Cisco technology and have worked on CUCME. The setup you are asking for requires knowledge of bacd and SNR on CUCME router. This is fairly an easy setup and should be completed quickly.
