I have a hobbyist Virtual Private Server running Centos, hosting several hobbyist websites.

The server crashes regularly , apparently due to a DoS attack and depletion of server resources and requires reboot by my service provider.

I have installed fail2ban, but the problem persists.

I need someone to harden my server so it no longer crashes.

Maybe install CSF or whatever you feel is necessary to prevent attacks/crashing

Also document the fix you carry out so I can learn.
