Hi, I am the co-founder of HandsOff solutions. We are an IOT based startup located in India. We provide hardware and software consultancy for IOT based projects. We have expertise of an exhaustive list of communication protocols including MQTT, Modbus, websockets etc.. MQTT is the simplest of them. Also you have done half of the work by installing mosquitto, now you just need to forward a port on the server (where mosquitto is installed) and then you can publish and subscribe to the remote server. Most of our development is done is python. We can use Paho-MQTT (and open source python module for MQTT client) . Controlling or data collection from GPIO pins will be quite simple.
